Friendsgiving Red Rice Recipe

November 18, 2016

On this #FoodieFamilyFriday I wanted to share the friendsgiving dinner at our house that we hosted this week wrapping up the book/Bible study that me and my husband was apart of. Which fed our spirit tremendously and knew it was time to feed our bodies and have this fellowship.  In the spirit of the season this is the time we give of ourselves.

I thought no better way than to share some of our family traditions. Chamorro red rice is a staple that you would see at any Chamorro party. Had to have it with chicken BBQ and finadeni.

You can make it several ways but I usually use what I have and have made it with healthy and not so healthy options. Will share that in the recipe below. The best thing to do is keep trying until you perfect it; that’s how I learn to new recipes.

Have fun and Happy Thanksgiving week everyone!

Chamorro Red Rice

Prep Time: 45 minutes

Serving 8-10

  • 5 cups short-grain rice, Calrose rice is preferred
  • 5 1⁄2 cups water
  • 4-5 Peices of Bacon or Turkey Bacon to make about 4 tablespoons bacon grease
  • 2 tablespoons olive oil
  • 2 tablespoon butter or I can’t believe it’s not butter (or whatever butter substitute you use)
  • 2-3  packages achiote powder (Depending how red you like it)
    • You can use achiote seeds and soak and ad to water
  • 2 Bouillon no MSG cubes or low sodium chicken broth in place of water
  • 1⁄2 cup onion, chopped
  • 4-5 of garlic cloves, chopped (adjust to your taste)
  • Sea Salt to taste
  • 1⁄2 teaspoon black pepper

Cooking Instruction

  • In a colander or strainer wash the rice continuously until the water runs clear
    • I preferably like to cook over the stove it’s how I was taught but do experiment with the rice cooker because I have tried but feel the stove is more consistent.
  • On med high heat add olive oil in non-stick stock pot
  • Add bacon and cook and put aside
  • In oil add onion, when onion is translucent add garlic, achiote packets, and seasonings
  • Add rice and mix to distribute evenly
  • Add water or chicken broth
  • Maintain heat bringing it to a full boil and keep stirring until rice is half cooked
  • Put lid and lower heat to med low
  • Let it finish cooking for another 15-20 minutes
  • Optional add chopped bacon at the end

Enjoy and let me know if you try this recipe!
